I just emailed Strathclyde University about a course and the head of the department said I would need Higher Maths. I'm only doing Int 2 Maths this year and I doubt if i done Higher I would get more than a C :(

The only way to get around that is to finish your Int2 this year and then do the Higher next year.

What course? Did it say this in the prospectus? Still apply with your Int2, start Higher Maths next year and then wait for the offer from Strathclyde. Things may change before you apply.
